Once these are combined, it takes about 20 minutes to form a perfect dough. This amount of time ensures the gluten has been well-developed.

When the dough is ready, it is pressed and shaped. The humidity for this step needs to be quite high, at around 30 per cent, to assist with the drying process. The time required depends on the shape of the pasta. The drying time for short pasta ranges between five and six hours, while long pasta requires 10 hours. It is very important to dry pasta in the correct way. The water needs to get to below Barilla produces different pasta shapes. Once the pasta is dried, it is carried through a conveyer system, so it can be automatically weighed and packaged. In this plant there are six production lines — four are dedicated to lasagne and two are used for the production of noodles. The processes are much different in this plant. There are no moulds or cutters here. Instead, water, semolina and eggs are simply combined and then processed to get the dough to the desired thickness. An average of million eggs are used in this plant each year. As egg pasta has a rougher texture than semolina pasta, the drying time needed is just one and a half hours.

In some ways, walking into the tortellini plant is akin to stepping inside an Italian kitchen. In this plant there are two production lines — one is dedicated to small tortellino and one is used for the production of big tortellino. The pasta fillings, made of various meats and herbs, smell absolutely delicious. Maintaining the correct temperature and humidity in the tortellini plant is critical. After visiting each of the pasta manufacturing plants, you will venture into the packaging areas, where everything appears to be operating with absolute precision.
