Butter and Margarine
An Act to make further provision with respect to the Manufacture, Importation, and Sale of Butter and Margarine and similar Substances. BE it enacted by the King's most Excellent Majesty, by and with the advice and consent of the Lords Spiritual and Temporal, and Commons, in this present Parliament assembled, and by the authority of the same, as follows:. Provided that this subsection shall not apply to premises which on the first day of January one thousand nine hundred and seven were being used as a butter factory and formed part of or communicated with premises which were then registered under the Sale of Food and Drugs Acts, if and so long as the Board of Agriculture and Fisheries so direct. If any substance intended to be used for the adulteration of butter is found in any butter factory, the occupier of the factory shall be guilty of an offence, under this Act, and if any oil or fat capable of being so used is found it shall be deemed to be intended to be so used, unless the contrary is proved. Production of Margarine and Low Fat Spreads
Margarine is a butter-like spread that many consumers use on a daily basis. Although it is derived from a variety of plant and vegetable oils, through a process called hydrogenation these liquid oils become the loved spread. To meet modern health concerns, trans fat free margarine is also created through another process called enzyme interesterification. Although it originally was a simple combination of hydrogenated animal fats, margarine as evolved into a spread of great diversity in its nutrition and manufacturing process. Since its invention nearly years ago, this spread has become a healthier alternative to butter, a notoriously unhealthy spread. I chose to research the chemistry of margarine because it is something I consume on a daily basis and I was curious about its content.

There are a lot of rumours when it comes to margarine. These ingredients can be mixed and matched to produce numerous types of margarine, such as pastry, vegan, salt free or trans fat free.
Butter is made from the butterfat of milk, whereas modern margarine is made mainly of refined vegetable oil and water. In some places in the United States, it is colloquially referred to as oleo , short for oleomargarine.
